Zuppa Tuscana Soup
4 slices of bacon
1 pound Italian sausage
1 large white onion
4 cloves garlic, minced
32 oz chicken broth
3 cups potatoes, slices
3/4 tsp salt
1/4 tsp pepper
2 loose packed cups of kale (cut bite sized)
1 cup heavy cream
Cook bacon, set aside. Cook sausage, set aside. Cook onion, add garlic. Add bacon and sausage. Add broth, potatoes, salt, pepper. Simmer 20 minutes or until potatoes tender. Add kale and heavy cream. Simmer.
Serve with fresh Parmesan cheese on top.
Sweet potato alternative: instead of potatoes use sweet potatoes and add white beans.
